Pasta is available in different varieties and flavors.

Try this pasta salad with your picnic!

Try spinach, red pepper, herb or tomato noodles to add color to your favorite pasta dish.

Prepare this recipe in advance. Cool to room temperature, refrigerate up to a day. Serve chilled.

Colorful Noodles with Chicken

2 tsp olive oil
1 medium red onion, thinly sliced
1 clove garlic, minced
1 1/2 cups sliced fresh mushrooms
2 T fresh lemon juice
1/2 cup frozen green peas, thawed
12 ozs tricolor corkscrew noodles
1 cup diced cooked chicken
1 cup quartered cherry tomatoes
2 T chopped fresh dill,or 2 tsp dried dillweed
1/4 cup grated parmesan cheese
fresh dill sprigs for garnish

Saute onion over medium heat in olive oil for 5 minutes
Stir in garlic, mushrooms and lemon juice. Saute for 3 more minutes. Add peas and saute until heated through, about 2 minutes. Remove from heat and cover to keep warm.

Cook noodles according to package directions, but do not add salt. Save about 1/2 cup of pasta water. Drain noodles and return to pot.

Add vegetable mixture. Stir in chicken, tomatoes, chopped dill and enough reserved water to moisten. Mix well

Sprinkle with parmesan before serving. Garnish with dill sprigs and a couple of thin lemon peels.

Picnic Egg Noodle Salad

A tangy taste with mustard and vinegar dressing

12 oz twisted egg noodles
3 cups cauliflowerettes
3 cups broccoli flowerettes
boiling water
6 cups quartered fresh mushrooms
1 large clove garlic, pressed
1 cup vegetable oil
1/2 cup distilled white vinegar
2 T fresh lemon juice
2 tsp prepared mustard
2 tsp Worchestershire sauce
1 to 11/2 tsp salt
dash pepper

Cook noodles according to package directions. Drain and pour into a large bowl.
Blanch califlower and broccoli in boiling water. Drain.
Add to noodles along with mushrooms.

For dressing, combine remaining ingredients in a screw top jar. Shake well. Pour over vegetable-noodle mixture. Toss well.
Cover, refrigerate at least three hours or overnight.

Makes 3 quarts.

To keep broccoli bright green, marinate separately.
