Sweet potato pie with nutmeg, cloves, cinnamon and ginger.
Hawaiian sweet potatoes can be pure white or dark purple in color. A sweet potato pie can be made with either of them. Conventional sweet potatoes are, of course, orange. It makes no difference what color the sweet potato is, the result is a beautiful addition to the table. Ingredients:
3 C sweet potato, cooked and mashed 3/4 C sugar 1 tsp salt 1/2 tsp nutmeg 1/2 tsp cloves 1 tsp cinnamon 1/2 tsp ginger 2 eggs 2 C milk
Add the dry ingredients and the unbeaten eggs to the sweet potato. Beat well. Pour in the milk and stir well. Turn into a half baked pie crust.Bake at 350F until the filling is set.Insert a toothpick in the center. When the toothpick comes out clean, it's done. *NOTE: If the mashed potatoes are very moist, use less milk.

1 lb purple sweet potato, peeled and diced into 1 inch chunks 1 lb orange sweet potato, peeled and dices into 1 inch chunks 1 tsp chili powder 1 tsp ground cumin 1/8 C cilantro leaves, chopped juice from 1 lime salt and pepper to taste 1 red pepper, seeded and cut into 1 inch slices 1 T scallions, thinly sliced 1 T ginger, peeled and chopped 1/3 C extra virgin olive oil
To cook the sweet potatoes, place them in a pot and cover with water salt the water and simmer the potatoes for about 8-10 minutes. Not too long or the salad will be mushy. Drain the potatoes and transfer to a bowl. Add all the rest of the ingredients and toss.
